For connoisseurs, instant coffee just won’t do. Some go so far as to acquire lever or pump-based espresso machines, but most are content with something rather simpler. Filter coffee makers and coffee percolators, two variations on one theme, both have their devotees. Then there is the hourglass-shaped moka pot. And as popular as any today is the cafetière, also known as the French press.
The question of which of these is the best coffee maker will never be resolved.
Filter Coffee Makers
The principle of the filter coffee maker is simple. Water is heated in one chamber, and allowed to drip slowly through a filter containing coffee grounds. It drips through to a second chamber which stands on top of a hot plate. When all the water has collected in the second chamber, the coffee – called filter coffee or drip brew – is ready to pour.
Most filter coffee makers use paper filters, which are discarded after use. Some, however, use permanent metal or plastic filters. These must be kept scrupulously clean if they are not to taint the brew.
